Banana Bread with Sesame Seeds

It is not as easy to find yeasty banana bread recipes as those with baking powder. This is for a bread maker.

I combined one of my favourite food blogger’s recipes (Heidi Swanson’s Sesame Banana Bread)  with one from a Marks & Sparks bread maker book and trusting my instinct. It worked twice now, so it is safe to post.

I am also trying out a an iPhone app called Comic Touch as per picture above.

Banana Bread with Sesame Seeds

Please excuse the mix of metric and cup measurements.


4 tbsp orange juice
200ml made up of 2 tbsp of milk and the rest of full fat yoghurt
2 medium sized or 3 small ripe bananas, mashed
3 tbsp clear honey (or 2 and 1 of maple syrup)
350 gr of strong white organic bread flower and 175 gr whole spelt flour
plus an extra 1-2 tbsp after the first kneading cycle, depending on the ripeness and size of the bananas
1 tsp salt
40 gr butter, diced
1 tsp easy-blend dried yeast
1/3 cup of white sesame seeds
1/3 cup of black sesame seeds


Gently heat the yoghurt/milk with the honey a little in a pan to a tepid temperature and pour into the bread pan.

Add the mashed bananas.

Sprinkle the flour over the liquid to cover.

Place the salt and butter into 2 or 3 corners of the bread pan.

Indent the flour and add the yeast.

Set the bread machine to the basic setting, medium crust. I have settings for three sizes and I used the one for the largest breads to give the baking a bit more time. If the dough looks to sticky at the end of the first kneading cycle add some more flour.

Add the sesame seeds after the second kneading cycle if you are not lucky enough to have an automatic fruit and nut dispenser. If you have one, add them to the dispenser in the beginning.

After baking turn out the bread to cool on a wire rack.

Very nice crumb.

And here my second attempt at making some jam. Still fighting with getting the jars to seal properly… and using too much sugar. But it looks nice.

Nectarine, brandy and pistachio jam.
